We create something in expression and representation of what we experience in the world. It is a way of communicating our very own, unique perspective on life. I think that is what art is for most people.
Personally, I use art to escape reality. That might sound unhealthy, but I enjoy fantasy art. I use art as a way of expressing what I wish I could experience in the world.
Anything made, inspired or framed by human endeavour can be claimed as art. Art is the product of humanity,it is a human concept made by and for humanity.
A thing only becomes art by the mutual agreement of maker and audience therefore at least two people
must be involved before a thing can be called art.
A thing can shift between art and artifact, creation and action it's value as art when assessed within a culture, is measured by the degree of relevence and unfortunately by misplaced metaphysical notions of beauty or based on its rarity or commodity value.
If I may disagree with a point you made, I do not believe there needs to be an outside audience for creative work to be considered art. If you, yourself are the only audience, it is still a work of art - an act of expression. Aspects of outsider art are a good example of this.
